Southwest Chicken Enchiladas
One of my favorite things to make is Chicken Enchiladas, I don’t use the original red chili sauce, I like to use the green chili sauce, I feel it has a better flavor and tastes better with chicken.
Ingredients:
- 1 – 2lbs. skinless boneless chicken breasts cut into pieces
- 1 can diced green chilies
- 1 bottle green taco sauce
- McCormick Montreal chicken seasoning to taste
- Milder Jalapeno Tabasco sauce
- 10 to 12 soft tortilla shells
- 2 8oz packages shredded Mexican cheese
- 1 28oz can Las Palmas green chili enchilada sauce
Directions:
- Combine chicken, diced green chilies, green taco sauce, Montreal chicken seasoning, Tabasco sauce in a frying pan.
- Cook on medium until chicken is done.
- Scoop a small amount into each tortilla shell, add some shredded cheese, fold over like a taco and place into greased baking pan.
- Continue for as many enchiladas as you wish. when the pan is full, pour enchilada sauce over the enchiladas, covering them completely.
- Add leftover shredded cheese to the top.
- Bake at 375 until cheese is melted. remove from oven and serve with sour cream if desired.
