Making Pear Butter
Ingredients:
Pears
water
sugar
ground cloves
ground cinnamon
ground ginger
apples
- peel and cut up your fruit, I like to use some apples with my pears because the apple supply a natural pectin that thickens/sets the pear butter.
- put in a large pan and cover with water,heat until fruit is very soft.
- drain fruit, and return to pan or put in a blender to puree. if returning to the pan, use a potato masher and mash fruit into a pulp.
- depending on the number of pears you used, put 2 cups of sugar for every 8 cups of chopped pears, into a sauce pan and melt. It will turn brown and caramelize.Pour into pears.
- add spices, a teaspoon of cinnamon for every 8 cups, a 1/2 teaspoon of ground cloves for every 8 cups, and a 1/4 teaspoon of ground ginger.
- mix and cook uncovered until thick
- remove from heat, and pour into warm sterilized jars.
- put on seal and lid, as it cools it should seal.
