Ingredients:

  • 1 pound ground beef
  • 2 T Worcestershire sauce
  • 1 egg
  • 2 tsp. garlic salt
  • 2 tsp. onion powder
  • 2 tsp. Montreal Steak seasoning
  •  1 cup of plain oats ( can substitute soda crackers for oats)

Directions:

  1. Mix all ingredients together in a bowl, until well mixed.
  2. Form into a loaf and place in a  greased loaf pan.
  3. Cover the top of the meatloaf with ketchup,and sprinkle parsley over the ketchup.
  4. Place in preheated oven, at 400*F for 35-45 minutes, until done.
  5. Let it cool for 5-10 minutes. ready serve.

One of my favorite things to make is Chicken Enchiladas, I don’t use the original red chili sauce, I like to use the green chili sauce, I feel it has a better flavor and tastes better with chicken.

Ingredients:

  • 1 – 2lbs. skinless boneless chicken breasts cut into pieces
  • 1 can diced green chilies
  • 1 bottle green taco sauce
  • McCormick Montreal chicken seasoning to taste
  • Milder Jalapeno Tabasco sauce
  • 10 to 12 soft tortilla shells
  • 2  8oz packages shredded Mexican cheese
  • 1 28oz can Las Palmas green chili enchilada sauce

Directions:

  1. Combine chicken, diced green chilies, green taco sauce, Montreal chicken seasoning, Tabasco sauce in a frying pan.
  2. Cook on medium until chicken is done.
  3. Scoop a small amount into each tortilla shell, add some shredded cheese, fold over like a taco and place into greased baking pan.
  4. Continue for as many enchiladas as you wish. when the pan is full, pour enchilada sauce over the enchiladas, covering them completely.
  5. Add leftover shredded cheese to the top.
  6. Bake at 375 until cheese is melted. remove from oven and serve with sour cream if desired.
